Caribbean Lime Steak is a flavor explosive like no other. Tender, juicy and down right delicious.
The fresh flavors of orange and lime juice, garlic, cumin and other spices make this 5 minute steak marinade amazing!
My favorite part of this recipe is that it is so simple and quick! It is very similar to my popular Pineapple Lime Flank Steak but I wanted to switch things up.
I wanted a different flavor combination that screamed “I am on a turquoise beach and let me drink fruity drinks” while I eat a delicious island meal. Mission accomplished with this simple Caribbean Lime Steak recipe.
The fresh taste of orange and lime juice break down the meat to make it so moist and tender. The flavors are just so vibrant. Add a little dry rub and oh my word, this Caribbean Lime Steak will knock your socks off!
A little Island feel in your backyard is perfect for your grill or smoker. This recipe is simple and quick! There is one catch though…..I love to marinate this for 24-36 hours. Why you ask?? Because it will literally melt in your mouth.
As we all know, steak has a tendency to be a little chewy. Unless you are eating filet mignon and that is in a whole other category in the steak world. Steak is not typically my go to in the meat department. BUT when it is marinated and cooked right, it can be perfection!
I have simple and easy cooking instructions for the oven and the grill but we need that marinating time to break down that meat to create a juicy, tender, melt in your mouth entree.
I promise Caribbean Lime Steak is worth the wait!

Step by step instructions
- First in a bowl add salt, pepper, onion powder, garlic powder, cumin, and brown sugar. Mix together.
- Place steak on a piece of parchment paper. Add the spice mix. Make sure to really coat your steak on all sides. Set aside.
- In a separate bowl, add your orange and lime juice, lime zest and chopped parsley to the bowl and stir.
- Then grate garlic over the glass bowl or you can use a garlic press.
- Place the steak in a zip loc bag and pour the marinade down on top. Seal the bag and place in the fridge for 24-36 hours. The longer the better!
How to cook the best steak
GRILL DIRECTIONS:
- Preheat your grill to 500 degrees. Place Caribbean Lime Steak on the grill and sear the steak for 2 minutes on each side.
- Move to indirect heat (medium heat) and cook until the internal temp reads 140 degrees with a meat thermometer. This takes about 9-12 minutes total. Flip the steak around the 5 minute mark which is halfway through the cooking time.
- Remove the steak from the grill and let it rest for 5-10 minutes. Then slice and enjoy!
OVEN INSTRUCTIONS:
- First Preheat oven to 400 degrees.
- Then preheat your oven safe pan (preferably a cast iron pan) on high heat. Melt a tablespoon of butter.
- Next place the Caribbean lime Steak in the skillet and sear BOTH sides for 3 minutes.
- Finally place the pan in the oven for 4 minutes for medium/rare or 6 minutes for medium. Remove from the oven and let it sit for 5-10 minutes. Then slice and enjoy!
Best way to serve steak
I love to use flank steak because it isn’t so crazy on the wallet and I love to slice this nice and thin and serve it so many ways. You can easily use whatever cut of steak you like, but I did use flank steak for this recipe.
Appetizers:
- Thinly sliced steak and serve on a cutting board with grilled veggies and let people grab and graze.
- Place little sandwich rolls on the side and make little Caribbean sliders with the veggies and condiments.
Salads:
- This steak is incredible served over a bed of greens (any type you like). Add some roasted red peppers, red onion, blue cheese and a vinaigrette dressing and you salad dreams will come true. I am not exaggerating a bit! Ha!
- Or slice this delicious Caribbean Lime Steak down on top of my Asian Noodle Salad. It is divine! The flavors just work.
Entree:
- I love to serve this as the main meal with grilled veggies and some simple side dishes.
- Low carb or Keto option: Coconut Lime Cauliflower Rice along with Steamed Green Beans or Pan Seared Brussel Sprouts. Those are just a few suggestions.
- Regular Macro or don’t care about the carbs kind of day 🙂 – My Pineapple Jalapeño Rice is so yummy! Roasted Sweet Potatoes is also perfect.

Tips for the best steak marinade
- When you are using a tougher type meat like skirt steak or flank steak, the secret is in the marinade and marinating time. Don’t freak out on me but 24-36 hours is perfection! This gives the citrus time to do its magic. The citrus fruit will start to break down those tough tendons and it almost melts it away. You are left with a tender, juicy and the most flavorful piece of meat. Pinky promise I won’t steer you wrong on this one.
- I am a big proponent of seasoning whatever meat you are cooking. You need to season every layer. DO NOT skip the dry rub portion. There is a lot of yum factor in there. 🙂
- Zip loc bags are a dream come true when marinating meats. Simply place the meat in the bag, pour the marinade down on top and its an easy clean up and you don’t have to worry about cross-contamination.
- ALWAYS use a meat thermometer. It will take the guesswork out of wondering when it is finished cooking. It is an inexpensive tool that will help you so much!
How to store and reheat leftovers
Store leftovers covered in the fridge for up to 4 days.
Stovetop Directions (preferred method): Place the sliced meat in a skillet on medium heat. Reheat for 2-4 minutes or until nice and warm throughout.
Microwave Instructions: Place the sliced Caribbean Lime Steak on a microwave safe plate. Reheat for 30-40 seconds or until nice and warm throughout.

- 2 pound flank steak
- 3/4 cup orange juice
- 1/4 cup lime juice 2 limes juiced, 1 lime zested
- 1/4 cup chopped parsley
- 2 cloves garlic
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 2 -3 tablespoons brown sugar

- In a glass bowl, place orange juice, lime zest, lime juice, 2 minced or grated garlic cloves, and chopped parsley into a bowl and mix well. Set aside.
- Place steak on a piece of parchment paper. Add 1 teaspoon salt, 1/2 teaspoon of pepper, garlic & onion powder, 1/2 teaspoon of cumin and 1 1/2 tablespoons of brown sugar to the top of the steak. Repeat this on the other side.
- Place flank steak in a zip lock bag and pour the marinade down on top. Marinate for 24-36 hours.
- Heat your grill to 500 degrees. Place the steak on the grill and sear BOTH sides for 2 minutes. Then move the steaks to indirect heat and cook 9-12 minutes, turning half way through. Each side should cook the same amount of time. The internal temperature should read 140 degrees.
- Remove from the grill. Let the flank steak rest for about 10 minutes before slicing. This allows the juices to stay inside the meat. Enjoy!

Notes
- To cut meat across the grain, look for the lines running next to each other on top of the meat and cut perpendicular to them.
- Store leftovers, covered in the fridge for up to 4 days.
- Freeze leftovers up to 12 months.
