Truth be told, I am not a huge potato fan, too many carbs for my liking and lacking flavor. BUT I can’t resist these little bites of heaven! I throw all caution to the wind and happily dig right in!
So….I have been known to stand over the baking sheet eating those extra crispy potatoes pieces and trying to hoard them all to myself! 🙂
I find these are perfect for an appetizer at parties or a simple dinner. They are fantastic for a formal dinner party or special holiday! Simple to make but will impress your family and friends.

What to serve with crispy smashed potatoes
Oh the possibilities are endless. There are several ways we love to eat these potatoes.
In my house, a grilled chicken recipe is always a hit. The flavors or Balsamic Lemon Chicken, Honey Mustard Chicken, or Sweet Shallot Chicken is pure perfection.
Beef for dinner? These are beyond good with my Smokey, Pepper Cheeseburgers or Pineapple Lime Flank Steak.
These are absolutely delicious with my Apricot Mustard Glaze Salmon. They will hit all your taste buds!

Meatless Monday? These are so good with a Spinach salad with warm bacon, sliced red onions and toasted pecans. Or a beautiful wedge salad with blue cheese. Crispy, crunchy potatoes are a perfect side dish that will complement those salads.
Ok I think I have made my point, these are perfect with about everything, let’s get these crunchy and crispy smashed potatoes baking!
Step by step instructions
- Fill a pot with water, place potatoes and salt in the water. Stir and place the stove on high heat. Bring the potatoes to a boil. Boil until fork tender. About 25-30 minutes.
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Add the potatoes to the baking sheet. Smash with the back of a glass cup.
- Spray the potatoes with olive or avocado cooking spray.
- Gently flip the potatoes and spray the other side.
- Add the salt, no salt seasoning, onion powder and fresh thyme to the potatoes. Squeeze half the lemon over top.
- Place in the oven and bake for 35-40 minutes or until nice and crispy. Oven temps vary. Do not flip while cooking. Remove from the oven. Squeeze the other half of the lemon over the potatoes. Serve nice warm and crispy!
Tips for making smashed potatoes
- I like to use a cooking spray for this recipe. First, I like that is have few calories then oil, since I am consuming all those carbs. 🙂 Ha! Second, butter can burn easily in the oven. I want crispy potatoes not burnt potatoes. Avocado Oil is my first choice of cooking oils.
- If you do want to use some butter make sure to mix with oil.
- If you can let the potatoes cool after you have smashed them they will get extra crispy.
- I love fresh herbs but if you don’t have them on hand, you can use dried thyme. Just use a 1/2 teaspoon instead.
- I find that a lemon juicer is easier than hand squeezing. I don’t have to go hunting for lemons seeds. Ha!
- You can use any no salt seasoning you would like. Costco has a no salt seasoning that I prefer. Trader Joes also sells a 21 seasoning that is fantastic. Those seasonings tend to add lots of flavor to dishes since there are so many dried herbs in them.
- The Crispy Smashed Potatoes reheat really well so they are perfect for leftovers!
How to store and reheat leftovers
Store leftovers covered in the fridge for up to 4 days.
REHEATING INSTRUCTIONS
Oven: Preheat oven to 375 degrees. Place potatoes on a parchment paper lined baking sheet. Add potatoes and reheat for 5-8 minutes or until they are crispy and heated all the way through.
Microwave: Place potatoes on a microwave safe plate and reheat for 30 seconds or until nice and warm all the way through.

- 1.5 pounds Small gold potatoes
- 3 teaspoons Salt DIVIDED
- 1 teaspoon No salt seasoning
- 1/2 teaspoon Onion powder
- 1 Lemon
- 1 teaspoon Fresh thyme
- 1 Spray Oil
Instructions
- Fill a pot with water. Add potatoes and bring to a boil. Add 2 teaspoons of salt and stir. Boil until fork tender about 25-30 minutes.
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Drain the pot and place the potatoes on the baking sheet. Smash the potatoes with the bottom of a glass. Spray the potatoes with olive or avocado oil spray.
- Gently flip the potatoes and spray the other side. Sprinkle the no salt seasoning, salt, and onion powder over the potatoes. Add fresh thyme.
- Place in the oven and bake for 35-40 minutes or until they are nice and crispy. Do not flip them while cooking. Remove from the oven and squeeze fresh lemon juice over the top. Serve nice and warm!
