Think chocolate chip cookie dough meets brownie who then meets fudge. Then they are all mixed together. That describes this sinful treat! Top this decadent dessert with a warm scoop of vanilla ice cream and all I believe all your dessert dreams have come true!
I took my Gluten Free Chocolate Chip Cookie recipe and turned it up a notch to create this Fudge Cookie Pie.
The best part, you get a scrumptious, mouth watering dessert on your table in under 30 minutes! Yup gluten free Fudge Cookie Pie can be on your table in no time flat!

There is nothing better then drawling people from all over the house as the smells start coming from the kitchen. Then the family gathers around the oven as you bring this delicious dessert to the table.
The real struggle is keeping the forks away from my dessert until I can snap the pictures! I always seem to have teenage boys in my house waiting to devour whatever comes out of my oven. 🙂 I am sure some of you can relate.

Let’s get started and make this gluten free Fudge Cookie Pie

Step by step instructions
- Preheat oven to 350 degrees. In a mixing bowl, add gluten free 1:1 ratio flour, half the chocolate chips, coconut sugar, cane sugar, and baking soda.
- In a microwave safe mixing bowl, add butter, vanilla, and the other half of the chocolate chips. Melt in the microwave in 20 second increments until the chocolate is melted. It should take 40-60 seconds.
- Add your egg and stir until all the chocolate is melted and everything is incorporated. Then pour your wet ingredients into your dry ingredients.
- Stir until everything is mixed together. It will look like a thick cookie dough texture.
- Finally grease a pie pan. Place, smooth and pat (with your fingers or a hard spoon) the thick batter into your cooking dish.
- Place in the oven for 16-18 minutes. Let it cool and then top with a big scoop of ice cream or my Fresh Whipped Cream! Either choice is divine!
Tips for success
- DAIRY FREE OPTION: Instead of using butter you can use ghee or any dairy free butter substitute. You can also use a dairy free chocolate. We like to use Enjoy Like Chocolate Chips. They are an allergen friendly chocolate. Here is some information on Enjoy life, you can read a detailed list of what is in their chocolate on their website.
- We like our fudge cookie pie all ooey and gooey. We bake ours for 16 minutes. If you would like a more firm, cookie like texture bake for 18 minutes. This truly is preference. We what a fudge like center.
- You can use a 9 inch pie can, cake pan, or cast iron skillet. I love to bake with my cast iron skillet. I just love the presentation of it. 🙂
- This recipe has been tested with 3 different Gluten Free 1:1 ratio flours. King Arthur’s, Cup4Cup, and Bob Red Mill. If your grocery store does not carry those, here are some amazon links to help you out.
How to reheat and store leftovers
Store leftovers covered in the fridge for up to 4 days.
Reheat: Microwave: Place Fudge Cookie Pie on a microwave safe plate and warm for 20 seconds or until it is nice and warm. Oven: Preheat oven to 350 degrees. Place pie in the oven and warm for 3-5 minutes.
FRREZER OPTION: Slice the fudge cookie pie in pieces. Wrap each piece in a small square of parchment paper. Then wrap in plastic wrap. This will help maintain the freshness of the dessert. It will also help with freezer burn. To thaw, remove from the frrezer and let it sit at room temperature til defrosted. Then warm in the microwave for 20 seconds.

Equipment
- Cast Iron Skillet, 8 X8 baking dish, or cake pan
Ingredients
- 1 1/3 cup Gluten Free 1:1 Ratio Flour
- 1 1/2 cups Chocolate Chips
- 1/2 cup Coconut Sugar
- 1/3 cup Sugar
- 1 stick Butter Room Temperature
- 2 teaspoons Vanilla extract
- 1 teaspoon Baking Soda
- 1 Egg
Instructions
- Preheat oven to 350 degrees. In a mixing bowl, add Flour, 3/4 cup chocolate chips, coconut sugar, sugar, and baking soda. Stir to coat the chocolate chips with the flour.
- In a separate microwave safe bowl, add room temperature butter and 3/4 cup chocolate chips. Place in the microwave and heat in 20 second increments until the chocolate and butter have melted. This will take between 40-60 seconds.
- Pour wet ingredients into the dry ingredients and stir. This will become a thick almost cookie dough like batter.
- Grease your pan and add the dough to the baking dish. Use a hard spoon or your hands to smooth the batter evenly into the pan.
- Place baking dish in the oven and bake for 16-18 minutes. Remove and serve warm!
