Gluten Free Zucchini Bites are so stinkin simple to make! A few simple ingredients, a few minutes to prep and 12 minutes to cook. What is there not to love!?
These are a hit every single time I make them! I love to see their faces as they take their first bite. Pure delight! Dunk a little in some ranch and everyone is happy. I mean who wouldn’t be?
We use the Zucchini Bites for appetizers along with my Pizza Dip, Bacon Wrapped Chicken, Stuffed Mushrooms and your party is complete! You might not even get your guests to leave! Ha!
Gluten Free Zucchini Bites are also perfect for breakfast, lunch and even a snack. The almond flour even makes this a great low carb option!
My kiddos will heat a few up, place them on a napkin and snack in the car on our way to sports events. Makes the mama heart happy! It will fuel their little bodies. Veggies, protein and some healthy fats. Truly a perfect snack!

Step by step instructions
- This is what you will need to make this delicious dish! Zucchini, eggs, almond flour, cheese, spring onions, salt, pepper, and smoked paprika.
- Preheat oven to 425 degrees. Shred zucchini. I love to use my julienne peeler for this. Makes it so easy! Then finely chop the zucchini into small pieces.
- Add zucchini, almond flour, cheese, spring onions, egg, salt, pepper and smoked paprika to a bowl. Mix until it is all combined.
- Line a baking sheet with parchment paper. I like to shape these into oblong shapes. (A perfect 2 bites) You can shape however you like. Just make sure they are about a 1/4 inch thick.
- Place them in the oven and bake 12-15 minutes. Oven temps can vary.
Tips for success
- When shredding your zucchini make sure you stop right at the seeds. This will help to make sure you do not have excess moisture in your dish. We do not want the gluten free zucchini bites to be soggy.
- NUT FREE OPTION: If you have a nut allergy you can substitute the almond flour for gluten free breadcrumbs.
- Make sure to chop you zucchini into small pieces, it makes it easier to form them into your bite size pieces.
- I like to use sharp cheddar cheese in this dish because I prefer a strong cheese. You could use Swiss, mozzarella, mild cheddar, etc. Just substitute for your family’s favorite type of cheese.
How to store
Store leftovers covered in the fridge for up to 4 days.
Reheat instructions
MICROWAVE INSTRUCTIONS: Place gluten free zucchini bites on a microwave safe plate and reheat for 30 seconds or until nice and warm.
OVEN INSTRUCTIONS: Bake at 350 degrees until they are nice and warm. About 5 minutes.

Ingredients
- 2 cups Shredded Zucchini
- 2 Eggs
- 1 cup Shredded cheese
- 1/2 cup Spring Onions
- 1 cup Almond flour
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 teaspoon Smoked Paprika
Instructions
- Preheat oven to 425 degrees.
- Shred your zucchini using the julienne slicer and then chop into small pieces. Chop your spring onions into small pieces also.
- Next add all your ingredients to the bowl. Add zucchini, almond flour, spring onions, cheese, eggs, salt, pepper and smoked paprika. Mix until everything is combined.
- Line a baking sheet with parchment paper. Take 2 tablespoons of the mixture and shape into oblong pieces. (A Perfect 2 bites). Place on the baking sheet. You will get 16 zucchini bites.
- Put your baking sheet in the oven and bake for 12-15 minutes. Oven temps vary. Serve warm!
