You might never eat sweet potatoes any other way once you try these Loaded Sweet Potatoes.
Oven roasted sweet potatoes, crispy bacon, spring onions, melted cheese and a ranch drizzle! I mean seriously people. What is better??
Perfectly roasted sweet potatoes, the crispy crunch of the bacon, the slight heat of the spring onion, the creaminess from the cheese and then a drizzle of ranch just sends your taste buds through the roof!
This perfect side dish comes together in under 30 minutes and is packed full of flavor, bonus it is also healthy and you have added a good carb into your dinner rotation.
White sweet potatoes are our favorite in this house! There are two types you can look for: Hannah Sweet Potato or Japanese White Sweet Potato. It will trick you into thinking you are having a white potato but with all the health benefits of a traditional sweet potato. A complete win in my book!
All you have to do is add some some Grilled Honey Lime Chicken, Honey Mustard Chicken, or even some Flank Steak sliced on top and your meal is done!
Turn it Tex-Mex by adding some Mexican Chicken and you will not be disappointed! Your Loaded Sweet Potato meal is complete.
If you notice closely the picture above is half cheese and half plan. Why you ask? I want a dairy free option for my Dairy Free peeps. My favorite bottled ranch dressing also happens to be dairy free also. Whoop Whoop!

Step by step instructions
- Preheat oven to 450 degrees. First place bacon in a skillet on medium heat. Cook bacon until your desired crispness. Chop and set aside. Also chop your spring onions.
- Then peel, slice and chop your sweet potatoes into small triangles.
- Next place a piece of parchment paper on a large baking sheet. Add the potatoes. Pour oil onto the sweet potatoes and then sprinkle with salt, pepper, onion powder, and garlic powder.
- Then place potatoes in the oven for 25-30 minutes. At about 15 minutes, make sure you flip and toss the potatoes around.
- Finally, 5 minutes before the sweet potatoes are finished cooking, add bacon and cheese. Your cheese will melt all down on top of those beautiful sweet potato pieces. Sprinkle spring onions and drizzle ranch down on top! Yummo!
Move over potato skins, Loaded Sweet Potatoes are the new thing! Doesn’t that look delish?!
Tips for success
- DAIRY FREE VERSION: Instead of using regular cheese, you can add an almond or cashew type cheese. Kite Hill, Viola life, and Daiya have some great options. Tessemae is a dairy free ranch also.
- Vegetarian or Vegan Version: Use the dairy free resources above and omit the bacon or use a bacon vegan option.
- If you cannot find white sweet potatoes in your local store, you can check the Asian markets. They usually carry them. If not you can use a traditional sweet potato.
- I like to use a partial cooked or precooked bacon. It is less mess on the stove and cooks quick. I like the red box of bacon at Trader Joe’s. All grocery stores carry one in the deli or bacon section.
- This also makes for an awesome appetizer. I have literally removed the pan from the stove and placed it along side other appetizers. It can replace the traditional bake potato skins.
How to store and reheat leftovers
Store leftovers covered in the fridge for up to 4 days.
REHEATING INSTRUCTIONS:
Microwave: Place Loaded Sweet Potatoes on a microwave safe plate, reheat for 45-60 or until nice and warm all the way through.
Oven: Preheat oven to 350 degrees. Heat for about 5-7 minutes or until nice and warm all the way through.

Loaded Sweet Potatoes

Ingredients
- 2 Large Sweet Potatoes
- 5 Slices of bacon
- 1/2 cup Shredded Cheese (optional)
- 1/4 cup Chopped spring onion
- 3 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
Instructions
- Preheat oven to 450 degrees. Slice and chop sweet potatoes into thin triangle shapes.
- Line a baking sheet with parchment paper. Add sweet potatoes to the pan. Add oil and sprinkle with salt, pepper, onion powder and garlic powder to the potatoes. Stir and mix everything together. All the potatoes should have seasoning and oil.
- Place in the preheated oven for 25-30 minutes. After 15 minutes, toss and mix the sweet potatoes around. Continue baking the additional 10-15 minutes. (5 minutes before your potatoes are finished cooking, add shredded cheese to the top. Let the cheese melt the last 5 remaining minutes.)
- While the sweet potatoes are baking, heat your stovetop on medium heat and cook your bacon to desired crispness. Let cool and then slice into small pieces. Also chop your spring onions.
- When the sweet potatoes are finished baking, remove from the oven and add bacon and spring onions. Drizzle with Ranch if you want to add a little extra zip.
