Have your heard of a no bake chocolate truffle that is healthy? Well I have the perfect one! I have yet to find someone who doesn’t LOVE these.
Soft, rich fudge-like center, will make you go weak in the knees when you take your first bite.
These are decadent and rich BUT you have no guilt eating one, two, or even three!
Kids and adults alike request these and they have no clue that not only do these take 10 minutes to make but they are gluten, dairy, egg, and grain free dessert!
My no bake chocolate truffles are easy to whip up for entertaining, afternoon snacks, or pre/post workout energy bites. Now that is fabulous!
I love a good dessert table at parties. Whether it is an easy family BBQ or a special holiday like Christmas or Easter, these dessert truffles will always be on the table.

I have even served these with Port and Dessert Wines as an after dinner dessert. Kid you not! No one had a clue they were eating a healthy dessert.
I was honored to be part of a health event where I served 200 of these No Bake Chocolate Truffles and I left the event with not a single one left over! In fact, parents were thanking me because they had a healthy dessert option for their kiddos.
Have I convinced you to try these perfect little balls of fudge chocolate goodness?? I sure hope so….. Let me show you how easy these are to make.
Step by step instructions
- Place all the ingredients except the chocolate chips into the food processor.
- Place the lid on the food processor and pulse until you the walnuts are in tiny pieces.
- Add the chocolate chips to the mixture.
- Keep the machine going until a dough like mixture forms. It will almost form into a ball.
- On a baking sheet lined with parchment paper, roll the dough into balls and place on the baking sheet. This should make about 24-30 depending on how big you would like them.
- Place the no bake chocolate truffles in the fridge for about 2 hours and they are ready to eat. Store them in a container in the fridge.
Bam! No bake chocolate truffles in 10 minutes.
Tips for success
- Technically you can eat them right away but I like for them to set in the fridge for a bit.
- Walnut pieces tend to be a bit cheaper than whole nuts, so look for those in the stores.
- You can substitute the walnuts for other nuts such as pecans or almonds. I just prefer the taste of the walnuts.

How to store
Store in a container in the fridge for several weeks.

No Bake Chocolate Truffles Recipe
Equipment
- Food Processor
- Baking sheet
Ingredients
- 2 cups Pitted Dates
- 1 1/2 cups Walnuts
- 4 1/2 tablespoons Cacao
- 2 teaspoons Vanilla
- 1/4 teaspoon salt
- 1/3 cup Dairy free chocolate chips
Instructions
- Place the dates, walnuts, cacao, vanilla and salt into the food processor. Pulse until the walnuts are little pieces. About 20-30 seconds.
- Put the chocolate chips into the food processor and process until the mixture forms into a ball. This will take another 45-60 seconds.
- Roll the mixture into balls and place on a parchment paper lined baking sheet. Place in the fridge for 2 hours to set. Store in a container in the fridge.
