Pan Seared Brussel Sprouts will make anyone fall in love with this veggie!
Crispy bacon, caramelized brussel sprouts, the perfect seasoning and then topped with a beautiful creamy cheese. You will absolutely, hands down love this side dish!
This is not your traditional boiled brussel sprout dish. These beautiful baby cabbage pieces will turn into a mouth watering, obsession.
A high temperature will provide for a rich, carmelized texture to the outside of this veggie. Tender on the inside but not mushy one bit!
I love crumbled, crispy bacon on my pan seared brussel sprouts. You know that is even better? When you sear the brussel sprouts in some of the leftover bacon grease. Instead of adding oil, just use the goodness left behind with the bacon. Holy Moly people! A pan of heaven.
Top them with a creamy smooth goat cheese that softens from the warmth of the cooked brussel sprouts, drizzle with a balsamic glaze and your tastebuds will have a party.

What to serve with brussel sprouts
I love to make these Pan Seared Brussel Sprouts with any grilled recipe. They are fabulous with Honey Lime Chicken or Honey Mustard Chicken. They are perfect to serve with your favorite hamburgers, like my Smokey, Pepper Cheeseburgers. Also perfect with BBQ Thai Pork Tenderloin.
How about some easy skillets chicken meals? Pan Seared Brussel Sprouts are perfect with Honey Garlic Chicken and Balsamic Jam Chicken.

Step by step instructions
- Slice and chop the brussel sprouts into quarters and halves depending on the size. Remove any dead or tough end pieces.
- In a cast iron or regular skillet on medium heat, cook bacon until your desired crispness. Remove from the pan and chop bacon into pieces.
- Keep a tablespoon of bacon grease in the pan. (If you are choosing to make this vegetarian or vegan add a tablespoon of oil to the pan.)
- Turn the pan to medium/high heat and make sure the grease/oil is hot. Place brussel sprouts in the pan. We want to sear them. We will be putting that nice caramelized crust on them. Add salt, pepper, onion powder, and garlic powder. Stir and then sear them for 5-8 minutes.
- You will get a nice charred look on some of your brussel sprouts. Turn your heat back to medium. Place a large lid on top of the brussel sprouts and let them steam for 4 minutes.
- Remove lid and continue to cook on medium heat for the final 2-3 minutes. In the last minute of cooking, add the bacon to reheat it. Sprinkle with goat cheese, feta, or a soft cheese like Boursin.
- Serve nice and warm.
Tips for success
- DAIRY FREE OPTIONS: Instead of goat cheese you can use your favorite almond milk cheese or favorite non-dairy soft cheese. I love Kite Hill or Violife Cream Cheese, Feta and Parmesan options.
- Vegetarian Options: Omit the bacon and bacon grease. Substitute with olive or avocado oil. Instead of bacon you can use an organic vegan bacon .
- Vegan Options: Use the links in the dairy free section for non dairy ideas, use the vegan bacon options in the vegetarian section.
- If you have a lot of bacon grease in your pan, you might want to remove some. All you need is a tablespoon of grease or oil.
- Balsamic Glaze is also a wonderful drizzle for these perfect veggies. Once the brussel sprouts are done, drizzle the glaze over the top. It adds a little sweet to your savory bacon and tang of the goat cheese.
- You can use whatever cheese your family likes. Feta, Goat Cheese, Boursin, Parmesan, and Gorgonzola are some ideas that we enjoy!

Pan Seared Brussel Sprouts
Ingredients
- 1 pound Brussel sprouts
- 5 slices Bacon
- 1/4 cup Goat Cheese (crumbled)
- 3/4 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 teaspon Garlic powder
- 1/2 teaspoon Onion powder
Instructions
- Place bacon in a skillet on medium heat. Cook the bacon to desired crispness. Remove from the pan and chop into small pieces. Set aside.
- Chop brussel sprouts into halves and quarters depending on their size. Half for small ones, quarters for large ones. Remove the tough ends and discard.
- Leave a tablespoon of bacon grease in the pan. (If you are not using bacon grease, add a tablespoon of oil to the pan). Place the skillet on medium/high heat. Once the grease/oil is nice and hot (right before the smoke point), add the brussel sprouts to the pan. Add salt, pepper, onion powder, and garlic powder. Stir and then let them sit and char (crisp) for 5-8 minutes.
- Next stir the brussel sprouts around and then place a lid on top of the pan to let them steam. Cook for 4 minutes. This will soften the insides. Remove the lid, stir and finish cooking for another 2-3 minutes. Add chopped bacon the last minute of cooking too reheat. Add goat cheese or cheese of choice. You can also drizzle with balsamic glaze. Serve warm.

I am the only brussel sprout eater in my family, but I converted two more with this recipe. I went with the Boursin Cheese option (garlic herb) and since the sprouts were still warm when I crumbled it the cheese melted. I gave it a little stir and all the sprouts then had a nice thin coating of the cheese. Worked perfectly!
