Elderberry Recipe

Equipment

  • Instant pot
  • Small pot
  • Grater
  • Strainer
  • Bowl
  • Glass Jars
  • Spoon or potato smasher

Ingredients

  • 2/3 cup Elderberries heaping cup
  • 3 3/4 cup Water filtered
  • 2 tablespoon Fresh ginger grated
  • 1 1/4 teaspoon Cinnamon ceylon is best
  • 3/4 teaspoon Whole cloves dried
  • 3/4 cup Honey Raw, local

Instructions

Instant Pot instructions

  • Place all ingredients (except honey) into your Instant Pot and stir. Place lid on the Instant Pot and make sure to seal, press the manual button for high pressure and set it for 9 minutes.
  • Remove the lid and smash berries with a potato masher or the back of a spoon. Strain the mixture and make sure all the juice goes into the bowl. Let the syrup come to room temperature, add the honey and stir. Store in a glass jar and refrigerate.

Stove top instructions

  • Place all ingredients (except honey) into your pot and stir. Bring mixture to a boil. Place lid on the pot and reduce your heat to medium/low and simmer for 45 minutes. Continue with step 2 for Instant Pot instructions.

Notes

You can use a cheese grater for the ginger.  
If you don't have any graters, you can chop the ginger into really small pieces.  We want all those health benefits getting into our syrup.
Dosage:  I am not a herbalist, I am just telling you what I give myself and my family.  We take a tablespoon a day.  If someone is getting sick, I usually double or triple the amount throughout the day.  So 3 doses.  For younger kiddos, I would give 1/2 teaspoon to 1 teaspoon.
