Chocolate Almond Butter Granola Bars Recipe

Chocolate, almond butter granola bars that are quick and easy to make. This simple recipe has few ingredients. A perfect healthier dessert!

Dry Ingredients

  • 2 cups Gluten free oats
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flax seeds
  • 1/4 teaspoon Pink Himalayan salt

Wet Ingredients

  • 1/3 cup Coconut oil
  • 1/4 cup Ghee can also use butter
  • 1/2 cup Coconut sugar

Middle Layer

  • 3/4 cup Chocolate chips
  • 1/3 cup Almond butter you can use peanut butter, sunflower butter, etc


  • Combine dry ingredients (gluten free oats, salt, flax and chia seeds) and set aside
  • Melt the chocolate and almond butter together in the microwave. Do this in 20 second increments until the chocolate is melted.
  • Melt coconut oil and ghee (butter) over medium heat, then add the coconut sugar and whisk to combine. Add the dry ingredients to the melted mixture. Reduce heat to low/medium heat. Make sure to stir constantly for 4-5 minutes. You do not want to burn the oats.
  • Take an 8 X 8 inch square pan and line it with parchment paper. Pour half of the oat mixture on the bottom of the pan. Pour the chocolate mixture over the oats and spread evenly. Place the remaining oat mixture on top of the chocolate. Press down on top of the oats to make sure all the layers "stick" together.
  • Place in the fridge for about 4 hours


  • The coconut sugar might not mix completely with the coconut oil and ghee.  It's ok! Once you keep stirring,  it will mix together.
  • Make sure to stir and watch your oats.  You do not want them to burn.
  • Mix the almond butter and chocolate together in the microwave every 20 seconds until it is all melted and combined.
  • Make sure you press down on the top layer of the oats.  If you do not the top layer  will not "stick" to the chocolate layer.  I use my hands to gently push down on the mixture to make sure it will all stick together.
