Chocolate Chia Pudding Recipe
An amazing and simple chocolate chia pudding that is gluten free and dairy free. Smooth, creamy and full of nutrients. No bake and rich chocolate taste!
- 1 can Full fat coconut milk
- 3 tablespoons Maple syrup
- 2 tablespoons Chia seeds
- 2 tablespoons Cacao
- 1 tablespoon Vanilla
- 1/2 Avocado
- 1/2 cup Chocolate chips
Add all the ingredients except the chocolate chips into the high speed blender.
Place chocolate chips in a microwave safe bowl and microwave 30 seconds to soften the chocolate. Add the chocolate to the blender.
Blend on high for 2 minutes. Transfer pudding to glass bowls and cover with plastic wrap. Place them in the fridge for 3-4 hours to set.
- If you do not care for avocados you can leave them out. I like the extra creaminess and nutrients it provides. You cannot taste the avocado!
- The chia seeds act like a binding agent so you cannot omit those from the recipe.
